Cuban Vegan Cuisine by Chef Wanda

The story of Prima’s Corner is a story of community and collective care.

For Prima’s Corner’s founder Wanda, food has always been a central part of life. From a young age, Wanda cooked meals with her mother and for her family which included her abuelita and sibling. Wanda and her sibling became vegetarian over 25 years ago. It was from there that she developed her authentic vegan recipes, unique dishes, and vibrant flavors that characterize her food, from croquettes to fried ‘chicken’ rice plates, pastelón and fresh salads.

Coming to the US from Cuba, Wanda always believed everyone deserves healthy, and delicious foods so started early on to volunteer with Food Not Bombs. It was there that she became known as Prima (cousin) by communities where she served meals each week. She would often offer meals at street corners to provide delicious, nutrient-dense and vegan meals to anyone for free. Her business name, “Rincon de la Prima” or “Prima’s Corner” is a tribute to that time.

Building on these experiences and her time working in numerous restaurant kitchens, Wanda has continued to hone her craft in food. Her dishes creatively interpret traditionally meat dishes into tasty vegan plates, that showcase the vibrancy of Cuban and Caribbean cuisine. Dining with Prima’s Corner offers a whole multi-sensory experience, often as a gathering place for community, music and celebration.

Through Oakland Bloom, Wanda has been growing her pop up and catering experiences, and is enthusiastic about vending at local farmers markets to reach more people with her innovative, and delicious foods.
